Nuits St Georges 1er Cru “Aux Chaignots”
AREA: 14 a 68 ca.
VARIETAL: Pinot Noir.
SOIL TYPE: Thin, pebbly brown limestone soil, over cryoclastic scree from white oolite, with a proportion of fine clay alluvium, sitting on pink limestone which breaks the surface in some ravines where the gravel proportion is abundant.
YIELD: 47 hl / ha.
AGE OF THE VINES: 50 years
PRUNING METHOD: Low-trained vines, sustainable approach, deleafing, harvested by hand.
VINIFICATION: Destalking, cold pre-fermentation maceration for 5 to 8 days, caps pushed down daily, pumping over morning and evening, alcoholic fermentation for 10 to 20 days at between 25-30°C, manual devatting.
AGEING: 12 months in oak barrels, then bottling on the estate.
TASTING NOTES: Its full color is immediately apparent. The nose reveals its aromatic complexity and intensity. The fruity nuances evolve towards soft blossom perfumes. As it ages, notes of balsamic, venison musk or licorice emerge to round out its subtle and distinguished aromatic range.
FOOD &WINE COMBINATIONS: This wine will go well with full-flavored meats – roast lamb, rib of beef, duck breast, or furred game. Why not try it with eggs or carp in red wine sauce? It will also shine alongside soft or rind-washed cheeses like Epoisses or Soumaintrain.
SERVICE: Drink between 5 and 15 years old, at a temperature of 16-18°C.
